Orlando Chefs Enjoy the Sweet Taste of Victory at National Pastry Championship

Chefs Will Represent U.S. at World Pastry Team Championship in 2006



 
 

Call them the champions of chocolate! Chef David Ramirez, executive pastry chef at Royal Pacific Resort at Universal Orlando, a Loews Hotel, and Chef Laurent Lhuillier, executive pastry chef at The Ritz-Carlton Orlando, Grande Lakes, teamed up with Chef James Mullaney from Sea Island, Georgia, to win the Amoretti 2005 National Pastry Team Championship. Months of planning and a series of intense 13-hour practice sessions resulted in victory. The team will go on to represent the U.S. at the World Pastry Team Championship in 2006.

The Amoretti 2005 National Pastry Team Championship, held in Phoenix in July, was a grueling 13-hour, two-day competition that tested the skills of America’s top pastry chefs.  Teams were required to make a chocolate showpiece, a sugar showpiece, three identical cakes, three identical frozen desserts, 14 identical plated desserts and an assortment of small cakes and bonbons.

Chefs Ramirez, Lhuillier and Mullaney won the $50,000 grand prize, along with top honors for best chocolate artistry and best degustation (flavor).  Their four-and-a-half foot chocolate rendering featured the mythological horse Pegasus, set in a base of milk chocolate, with white chocolate wings that were brushed orange.  The mythological theme continued with their sugar masterpiece, the white wings of Icarus flying into a red and orange sun.

The 2006 World Pastry Team Championship will have “Team USA” compete against teams from 11 other countries for the title of World Pastry Team Champion. Carymax, LLC, a New York City-based event production company created the National and World Pastry Team Championship, as well as other competitions and forums nationwide.
