During the festivities, between October 31st and November 2nd, families exchange sugar skulls, or calaveritas. Flavors include Blanca, 33 percent cocoa butter, solid Venezuelan white chocolate; Barcelona, 41 percent cacao milk chocolate with hickory smoked almonds and grey sea salt; and Red Fire, 55 percent cacao dark chocolate with ancho and chipotle chillies and Ceylon cinnamon.

Eye Scream dessert, designed by pastry chef Anthony Chavez. A Valrhona white chocolate, pistachio mousse and raspberry-lychee coulis creation presented on a bed of dry ice to resemble a pair of smoking eyeballs.

Woodhouse Chocolate www.woodhousechocolate.com, in Saint Helena in Califonia’s Napa Valley, creates special chocolates in the forms of mummies, witches, cats, tombstones, pumpkins, gravestones, and skulls.
