A Passion for Chocolate Master Classes
at The Capital Hotel and Restaurant



 
 


“Chocolate is such a complex ingredient to work with. It can be compared to wine with such an incredible variety of flavours, says Eric Chavot, Head Chef at London’s Capital Hotel and Restaurant. The Capital Restaurant
is the only London restaurant within a hotel to hold two coveted Michelin stars.

Now the Knightsbridge hotel is offering a series of chocolate and petit fours master classes hosted by the restaurant’s pastry chef Andrew Gravett, who trained at L’Ecole du Chocolat in France using Valrhona chocolate and at Bellouet Conseil (Gatronomic School of Paris). He has worked at The Capital Restaurant since 1999.

“I trained initially with Xavier Havard (currently at The Ritz, Paris) who taught me the basic techniques of pastry, always pushing me to experiment and more importantly to consider taste above presentation,” says Chef Gravett. “Chef Chavot has taught me the importance of textures and temperatures in everything we create.” In fact, Chef Gravett, often prepares his chocolate creations at 5 a.m. to get the right result.

The Passion for Chocolate master class package includes a gift chosen by Chloé Doutre-Roussel, chocolate buyer for Fortnum and Mason; The Chocolate Connoisseur; a chocolate making starter kit from Divertimenti and a gift voucher with 20 percent discount for their Knightsbridge or Marylebone stores.

Guests arrive at 2pm for afternoon tea followed by the chocolate and petit fours master class. They will work with dark chocolate ganache flavored with banana and rum, earl grey, lavender, and passion fruit.
