“I trained initially with Xavier Havard (currently at The Ritz, Paris) who taught me the basic techniques of pastry, always pushing me to experiment and more importantly to consider taste above presentation,” he says. Eric Chabot, the hotel’s executive chef, “has taught me the importance of textures and temperatures in everything that we create.” “Chocolate is such a complex ingredient to work with,” says Chef Chavot, “and Andrew often prepares his chocolate creations at 5 a.m. when the temperature in the kitchen is more conducive. Chocolate can be compared to wine with such an incredible variety of flavours. Andrew has a genuine passion for chocolate.” The Passion for Chocolate master class includes a gift of Chloé Doutre-Roussel’s (chocolate buyer for Fortnum and Mason) ‘The Chocolate Connoisseur’ book, a chocolate making starter kit from Divertimenti and a gift voucher with 20% discount for their Knightsbridge or Marylebone stores.
