Four Extreme Chocolate Workshops
www.ritzparis.com at the Ritz Paris.Half-day sessions for gourmets and curious amateurs will be held September 25, October 16, November 27, and December 11. The course is designed by Michael Roth, Ritz Executive Chef and Gilles Marchal, Creative Director of La Maison du Chocolat.

French Pastry School
www.frenchpastryschool.com. Fundamentals of All Things Chocolate taught by Pastry Chef Kristen Ryan. She will share the secret of working with chocolate in different kinds of recipes. Using some of the best white, milk and dark chocolates available, participants will learn how to make a selection of cocoa products, including petits fours, eclairs, souffles, and restaurant-style plated desserts. Chef Ryan is a graduate of The French Pastry School’s L’Arte de la Patisserie program and has worked with top pastry chefs Pierre Herme, and Pierre Zimmermann, and Thierry Mulhaupt.

West Coast Chocolate Festival

October 22-23 Seattle, WA
Third Annual Northwest Chocolate Festival at Seattle Center
features artisan chocolate makers. More than 70 classes feature culinary demonstrations, chocolate tasting, special talks on chocolate origin and trade equity, health and wellness experts, a chocolate martini workshop, an aphrodisiac room, chocolate paired with beer, cider, and wine and a Kid’s Zone sponsored by the Seattle Children’s Chocolate Makers.

 
 
 
 

October 29, 2011 Boerne, TX
4th Annual Chocolate Festival of Texas and Texas Wine Event
www.ChocolateFestivalofTexas.com at the Kendall County Fairgrounds. The event, located in the Texas Hill Country just west of San Antonio, will feature chocolate and food sampling, shopping for the holidays, demonstrations, chocolate competition, and live music.
