taught by Pastry Chef Kristen Ryan. She will share the secret of working with chocolate in different kinds of recipes.
Using some of the best white, milk and dark chocolates available, participants will learn how to make a selection of
cocoa products, including petits fours, eclairs, souffles, and restaurant-style plated desserts. Chef Ryan is a graduate
of The French Pastry School’s L’Arte de la Patisserie program and has worked with top pastry chefs Pierre Herme,
and Pierre Zimmermann, and Thierry Mulhaupt.
