Caramel Chocolate Cheesecake

1 ½ cup chocolate wafers
3 oz butter, melted
Chocolate Cheese Cake
1 cup sugar
1 cup heavy cream
8 oz bittersweet chocolate
½ cup sour cream
24 oz. cream cheese
4 whole eggs
1 vanilla bean
Preheat oven to 300 degrees F.
Make caramel with sugar and heavy cream. Add caramel to
chopped chocolate. Stir in sour cream. Beat cream cheese
until fluffy and add chocolate mixture at low speed.Add eggs
one at a time and vanilla. Pour into mold and bake for 1
hour at 300 degrees F and 30 minutes at 350degrees F.
Let rest and set at room temperature.
