Savory Chocolate Steak Sauce
2 tablespoons olive oil
2 tablespoons shallot, diced small
2 tablespoons good quality balsamic vinegar
¼ cup port wine
¼ cup beef stock (not broth)
1 teaspoon fresh rosemary chopped fine

Heat olive oil over medium heat in a small- to medium-sized
sauce pan. Add shallots to pan (you should hear an immediate
sizzle) and stir continuously until golden brown color. Add
balsamic vinegar and port wine, stirring constantly into a
thick, syrupy glaze. Be careful not to burn.
Add beef stock and rosemary and bring to a simmer. Reduce
heat to low and shave chocolate over pan with a decorator,
stirring constantly until smooth in texture.
Serve in small pitcher at the table.
