White Chocolate Caprese Cake (Torta Caprese Bianca)

Makes 1 12-in-round cake (serves about 12)
6 eggs
10 oz white chocolate
10 oz almonds, peeled
¾ cup + 2 tbsp Sugar
¾ cup (1 ½ sticks) Butter, softened
Zest of 3 Lemons (yellow part only)
Juice of 1 lemon
1 tsp baking powder
1 tbsp Limoncello
In a large bowl, cream butter
with an electric mixer for about 10 minutes until foamy.
Add the sugar and continue to beat for an additional 10
minutes. Add the eggs one at a time while still mixing.
Meanwhile, chop white chocolate with almonds in food
processor until finely ground. Add to the butter mixture
and mix well. Add the lemon zest and lemon juice.
Lastly, add the baking powder and Limoncello and mix
until well combined. Prepare 12-in round baking pan with
butter and parchment paper (or butter and flour).
Pour batter into the prepared pan and bake at 350F for about 40-50 minutes until golden.
Remove and allow to cool completely. Once cooled, flip
out of pan into serving dish and serve dusted with
powdered sugar and garnish with lemon zest curls, if
desired.
