Low-cal Dark Chocolate Mousse
Created for the Oaks at Ojai (CA)

Serving size: 2 tablespoons (served with 1/2 cup fresh berries)

8 ounces silken tofu
2 oz. bittersweet chocolate
5 tbs. cocoa
1/4 cup decaffeinated coffee
2 tbs. agave nectar
1 tsp. vanilla extract

In a food processor, puree the tofu until smooth. Place the chopped chocolate, coffee, vanilla and agave in a small sauce pan and stir constantly over medium heat until melted and smooth.Stir in cocoa powder until smooth. Cool. Add chocolate mixture to tofu and puree until well blended. Put in bowl and chill at least two hours.

Scooped onto plates with a small ice-cream scoop or put into individual parfait dishes when first made. Top or decorate with 1/2 cup fresh raspberries or strawberries, stemmed and quartered.
