Goat Cheese Marbled Brownies with Fresh Raspberries

By Gena Knox

These rich brownies are perfect comfort food. I added some Belle Chevre goat cheese in the cheesecake marbling and they are sheer heaven!

Prep time 20 minutes
Cook Time 45 minutes
Yield 16 brownies

Brownies
7 ounces dark chocolate, chopped
2 sticks, unsalted butter
1 ¾ cup brown sugar
4 eggs
1 1/3 cup plain flour
¼ teaspoon baking powder
1/3 cup cocoa powder

Goat Cheese Topping
5 ounces cream cheese, softened
3 ounces goat cheese, softened
2 eggs
¼ cup honey
1 ½ cup fresh raspberries

Preheat oven to 350°F. Place chocolate and butter in a saucepan over low heat and stir until melted. In a large bowl combine sugar and eggs, slowly stir in chocolate mixture. Sift flour, baking powder, and cocoa powder into bowl and combine.

Pour batter into a greased, 9-inch square baking pan lined with parchment paper and set aside. Process softened cheeses, eggs, and honey in a food processor until smooth. Place large spoonfuls of mixture on top of batter and swirl with a butter knife.

Sprinkle fresh berries on top of brownies and bake for 45-50 minutes until set. Brownies should still be gooey in middle.
