This recipe quick, sugar-free recipe was created by Brenda J. Ponichtera,registered dietitian and award-winning author, for anyone trying to limit calories, fat, and sugar. An editorial advisor for Today's Diet and Nutrition, Ponichtera is a member of the American Dietetic Association and the American Diabetes Association. Her cookbooks, all Benjamin Franklin Award winners, have been recommended in publications such as "O" The Oprah Magazine, Cooking Light, Miami Herald, Shape magazine, and USA Today.

Chocolate Mocha Mousse

From Quick & Healthy Recipes and Ideas, 3rd Edition, 2008 Brenda J. Ponichtera, R.D, Published by Small Steps Press.

For Christmas, decorate with a miniature candy cane or crushed peppermint candies (sugar free are available).

3 cups fat-free milk
1 tablespoon instant coffee crystals, regular or decaffeinated
1 large box (2.1 ounces) sugar-free instant chocolate pudding
3 cups fat-free whipped topping (8-ounce container)
fat-free whipped topping (optional)

In a medium bowl, mix milk with coffee. Let set a few minutes and then stir until coffee is dissolved. Add pudding mix and stir constantly with a wire whisk for 2 minutes. Refrigerate for 5 minutes.

Add whipped topping and mix well. Pour into a serving bowl or individual parfait glasses. Garnish with additional whipped topping, if desired.

This is ready to eat or you can refrigerate it and serve later.

Makes 6 cups

8 servings, each serving is 3/4 cup
