Frozen Fruit with Hot White Chocolate
Hagen Wegerer, owner and head chef at
Cactus Blue on the Caribbean island Bonaire, delights his
guests with this fruit and chocolate desserts. It’s cool and
simple and beautiful. “Frozen Fruit
with Hot White Chocolate
is one of the more popular desserts at Cactus Blue,” says
Chef Wegerer.
“I have a great supply of frozen wild
berries—cranberries, blue berries, raspberries and black
berries—which make for a very tart combination.
“Melt equal quantities of white
chocolate and heavy full cream together in a bowl over
simmering water. The two ingredients blend beautifully.
“Place a nice amount of berries onto the
corner of your dessert plate and sprinkle some powder sugar
over it. Pour the hot white chocolate either into a small
ramekin or directly onto the plate and serve to your
friends. The combination of tart cold fruit and hot sweet
chocolate is too much!”
