Chocolate Soufflé

Serves 8
Ingredients
¼ lb. unsalted butter
1 cup flour
1 cup sugar
2 cups milk
1 cup chocolate
10 egg yolks
remaining egg whites
Directions
Make a roux with butter and flour.
Bring milk and sugar to a boil before mixing with roux.
Keep stirring for about 3 minutes.
Allow to cool.
Incorporate the egg yolks, a few at a time, and chocolate. In a
separate bowl, whisk the egg whites until soft peaks form.
Fold the soufflé base with egg whites.
Cover 8 ramekins with butter and sugar, before pouring batter to the
rim.
Bake at 350º for 20 minutes.
