Two Chefs Restaurant in South Miami is famous for its seven souffles, chocolate being the most popular. This recipe was created by Executive Chef and owner Jan Jorgensen. (See article on Chef Jorgensen.)

Chocolate Soufflé

Serves 8

Ingredients
¼ lb.                unsalted butter
1 cup                flour
1 cup                sugar
2 cups              milk
1 cup                chocolate
10                    egg yolks
remaining egg whites

Directions
Make a roux with butter and flour.
Bring milk and sugar to a boil before mixing with roux.
Keep stirring for about 3 minutes.
Allow to cool.
Incorporate the egg yolks, a few at a time, and chocolate. In a separate bowl, whisk the egg whites until soft peaks form.
Fold the soufflé base with egg whites.
Cover 8 ramekins with butter and sugar, before pouring batter to the rim.
Bake at 350º for 20 minutes.
