This fudge is a huge hit with teens and younger, but its blend of
flavors makes it interesting for adult palates, too.
Show Choir Fudge
2 ½ c white sugar
¾ c
evaporated milk
½ c soft
butter or margarine
½ t salt
3 c
miniature marshmallows
1 c
butterscotch morsels (6 ounce package)
½ t maple
flavoring
2 c milk
chocolate morsels (11.4 ounce. Package)
1 t
vanilla extract
1 c
chopped pecans (optional)
In a large heavy
saucepan, combine sugar, milk, butter and salt. Cook, stirring
constantly, until mixture comes to full boil. Boil 5 minutes,
stirring constantly. Remover from heat. Add marshmallows. Stir until
mixture is smooth. Add the butterscotch morsels and maple flavoring
and stir until mixture is smooth. Then add the chocolate morsels and
vanilla, stirring until smooth. Add nuts, if used, and pour mixture
into a 9X 3 inch pan sprayed with Pam. Refrigerate until firm,
approximately three hours.
Note: Because of
the marshmallows, this fudge sets up very quickly, usually in the
pan if you’re not mindful of the consistency.
Comment: Our
oldest grandson, Tony was in his school’s show choir. Every time the
choir traveled to a competition, we sent along the fudge. Didn’t
bring them any particular luck, but it did become a tradition.
During Tony’s four years in show choir, we probably prepared 500
pounds of this fudge. We give it for Christmas gifts and,
occasionally, send some to the
current show choir for old times’ sake.
