Artisan Chocolates with a Fiery Twist

Chuao Chocolatier in Encinitas is changing the way Southern California chocolate lovers enjoy chocolate.

I have just discovered the most heavenly chocolate place in the world. And if you are a big believer in the aphrodisiac and medicinal and healing properties of chocolate (it certainly makes you feel good) you will make regular pilgrimages to this delicious chocolate Mecca. You can even order your own chocolate altar.

Chuao Owner and chocolatier Michael Antonorsi came from Venezuela to accomplish the dream of opening a unique chocolate boutique to create delicious chocolates and a comfortable chocolate lounge.

Named after the legendary cacao-producing region of Chuao in central Venezuela (pronounced chew-wow), Chuao Chocolatier melds traditional French and Belgian techniques with Venezuelan chocolate, the champagne of chocolates. At the heart of Chuao Chocolatier’s ganaches, buttercreams, caramels, and other creative fillings are ancient spices--used as the Mayans used them--aromatic herbs, tropical fruits, and roasted California nuts. Chuao chocolates are made with only natural ingredients and no preservatives.

Chuao’s unusual recipes introduce the palate to unexpected and delicious sensations like the Picante, a bonbon with California raisin fondue and Napa valley cabernet caramel spiced with pasilla chili and cayenne pepper covered in dark Venezuelan chocolate; or Chevere, a silky goat cheese and Williams pear butter cream bonbon enhanced with a touch of crushed black pepper corns inside dark Venezuelan chocolate..

Chuao Chocolatier can be found at The Lumberyard, 937 S. Coast Highway in Encinitas; Westfield Shoppingtown UTC, 4545 La Jolla Village Drive in La Jolla;

Carlsbad Forum, 1935 Calle Barcelona in Carlsbad; Del Mar Highlands, 3485 Del Mar Heights Road in Del Mar; and the Irvine Spectrum Center, 93 Fortune Street in Irvine.
